Sambar is a staple to south Indian cuisine and is a must on a day to day basis. it can be made with different types of vegetables or a combination of all vegetables as a side dish to steamed rice, idli &dosa
one such popular variety is drumstick sambar or also known as murungakkai sambar from the south Indian cuisine.
its most preferred recipe for many south Indians. this is mainly due to rice being a staple food and it needs a spicy and watery side dish to relish with. there are many ways and a variety of sambar but the basic ingredients remain the same. it must contain a vegetable, toor dal for its base, and a special blend of spices. out of all the vegetables, drumstick or murungakkai is very commonly used, particularly in Tamil and Andhra cuisine.
firstly, in this recipe, I have freshly prepared the sambar masala which is later added while boiling the sambar. if you do not wish to make it from the scratch, you can use any store-bought sambar powder. lastly, you can add any choice of vegetables with drumstick while boiling it. but the combination of drumstick and shallots results in an ideal flavored sambar recipe.
